Be very popular at your next holiday party! Some things are too good to keep to myself.  Here’s a family favorite that everyone seems to love.

Avocado Pomegranate Salsa

  • 2 ripe avocados, diced
  • 1 tomato, diced
  • Seeds of 1 ripe pomegranate
  • 2 T. minced onion
  • handful of fresh cilantro (or 1/4 T. ground coriander)
  • 1/8 tsp cayenne pepper
  • 1 T. Lime or lemon juice
  • 1/2 tsp salt

Mix and chill. (good the next day). Serve with tortilla chips… the ones with flax seeds in them are almost healthy!

*Pomegranate tip: Peel them in a bowl under water. The seeds sink to the bottom of the bowl and the rind floats. If the seeds squirt out, they don’t ruin your shirt.

*Buy pomegranates that are ugly and have cracks in them. They are the juiciest. If you’re a lazy chef, you can buy just the seeds at Trader Joe’s.

    Thanks for sharing this recipe. It sounds so yummy and I can’t wait to try it out! Thanks for the tip about peeling a pomegranate also- might save a squirt in the eyeball as well as save the shirt!

    PS – now I’m all eager to get my mala beads out and join in meditation, but I’ve lasted 30 days! I should wait 5 more to open them up for my bday and then I’ll join in. I’d hate to blow it in the 5yd line. :o)
